Ingredients for the base:
- 1 cup Cashew nuts
- 1 cup organic desiccated coconut
- 1/2 cup dates (soak if necessary to soften)
- 1/4 tsp Pink himalayan salt
Topping:
- 1 cup Cashews
- 1/3 cup Coconut Oil
- 1/3 cup maple/rice malt syrup
- 3 Tbsp Cacao powder
- 1 tsp Vanilla extract
- 1 tblsp water
- 1/8th tsp Pink Himalayan salt
Blend all the base ingredients in the processor until it sticks together & the dates are well blended. Dump the mix into a pan/dish and press firmly to make your crust. Blend all the topping ingredients until very smooth. Pour onto the base, smoothing with the back of a spoon. Cover and freeze for at least and hour then slice into bars. Store in the freezer or fridge.
